Making Snack Time Easier – Tip and Tricks – It seems like we are always busy. Running to the doctor, chauffeuring kids about, grocery shopping, taking care of our pets, you name it. When you suffer from a chronic illness, running out of energy happens very quickly, everyday. We don’t always have the energy to prepare a full meal everyday. Let alone break out our aprons after we have tackled the grocery store. Nothing like dropping a bundle at the grocery store, getting home and being to tired and ouchy to cook. Happens to all of us, all of the time. Stop feeling guilty about it. You can only do, what you can.
My brood and I are often busy. Fibromyalgia and CFS or SEID are always hanging around to throw a monkey wrench in my plans for everything. I love to cook, but most days just don’t have the energy for it anymore. So I am often looking for meals that are easy to prepare and not time consuming, with minimal clean up. Can’t eat pizza everyday, now can we?
A favorite and easy light meal in our house is a plate of deli meats, cheese and crackers. This weekend after running to the store, I did a little prep work. I grabbed my selections of meat and cheeses and started cutting things up. Slice everything into cracker size pieces. Don’t worry, we aren’t looking for perfection. Place your cut up goodies in an airtight storage container, meat on one end and cheese on the other. You don’t have to worry about cross contamination because everything is already cooked. Now you are ready. Makes things so much simpler when everything is cut up and ready to serve and it took me all of 10 minutes to do, maybe not even that. Slice up an apple, add some grapes and greens, viola! You have a meal. Not complicated, easy to do, minimal clean up. The variety and combos of what you can pile on cracker are absolutely endless and fun. If you are feeling a little adventurous, break out your favorite fruit spread, throw some in the oven for a nice bite of delicious meltiness. Imagine some brie and apricot preserves. Grab a plate, a glass of wine and put your feet up. Dinner is served.
